Ingredients:

  • 250g paneer, cut into cubes
  • 2 tablespoons ghee or oil
  • 2 onions, finely chopped
  • 2 tomatoes, pureed
  • 2 tablespoons cashews, soaked in warm water
  • 2 green cardamoms
  • 1-inch cinnamon stick
  • 2 cloves
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 cup fresh cream
  • 2 tablespoons yogurt (whisked)
  • 1 teaspoon sugar (optional)
  • Salt, to taste
  • Fresh coriander, for garnish

Instructions:

  1. Prepare Cashew Paste:
    • Drain the soaked cashews and blend them with a little water into a smooth paste. Set aside.
  2. Sauté the Spices:
    • Heat ghee or oil in a pan over medium heat. Add green cardamoms, cinnamon, and cloves. Sauté for about 30 seconds until fragrant.
  3. Cook the Onions:
    • Add the chopped onions and cook until golden brown. Add the ginger-garlic paste and sauté for another minute.
  4. Add Tomatoes & Spices:
    • Stir in the pureed tomatoes and cook for 5-7 minutes until the oil starts separating from the mixture. Add turmeric, red chili powder, coriander powder, and salt. Cook for another minute.
  5. Blend the Sauce:
    • Once the tomato mixture is cooked, cool it slightly and blend it into a smooth paste. Return the paste to the pan.
  6. Add Cashew Paste:
    • Stir in the cashew paste, yogurt, and sugar (if using). Let it cook for a few minutes, stirring frequently to avoid curdling.
  7. Add Cream & Paneer:
    • Add the fresh cream to the sauce and mix well. Gently fold in the paneer cubes and simmer for 5-7 minutes, allowing the paneer to absorb the flavors of the gravy.
  8. Finish with Garam Masala:
    • Sprinkle garam masala on top, stir gently, and remove from heat.
  9. Garnish and Serve:
    • Garnish with fresh coriander leaves and serve hot with naan, roti, or basmati rice.
